We have an ice day!! It never snows in San Antonio and we are on our second snow/ice day this winter. This is record-breaking for us. Schools are closed, highways are shut down, and most importantly I am spending the day on my couch in my slippers, drinking peppermint lattes, and watching the sleet come down outside. Living in a city that cries “Uncle!” the minute our forecast predicts weather below 35°F is glorious.
The down side to a day stuck inside is the *boredom* that ensues for some. While I am perfectly content lounging on the couch all day, Lee was fed up with the slow day at about… wait for it…. 7:30am. So at about 10am after a couple hours watching the news, I set up a little pretzel making station in the kitchen.
These are the easiest snacks to make. Use whatever pretzels you have on hand (tiny one-bite size, large, sticks, they all work), pick from your favorite candies or whatever happens to be in your pantry, and go to town. I am seeing visions of flaky sea salt topped pretzels in the future…
These also make the best gifts since they keep for 2 weeks. If you are looking for activities to do with your little ones, or perhaps your super bored husband on a day like today, then look no further!
Candy-Coated Chocolate Covered Pretzels
Customize your own chocolate covered pretzels with your favorite toppings!
- 16 ounces semi-sweet chocolate chips
- 1 tablespoon coconut oil
- 15 medium pretzels mine are 3 inches wide
- assorted candies Mini M&Ms, toffee bar, Butterfinger bar, etc.
Arrange the candy in bowls. If you are using bars such as toffee or Butterfinger, chop them up into small pieces first.
Line a rimmed baking sheet with parchment paper or foil.
Combine chocolate chips and coconut oil in a bowl. Microwave for 30 seconds, stir, then heat for another 30 seconds and stir again. Keep heating for 30 seconds at a time until the chips are melted and can be fully stirred together.
Using a fork to help hold the pretzels, dip the pretzels into the melted chocolate one by one until fully coated. Lay the pretzels on the baking sheet and top with candies. Allow to cool for about an hour, or speed this up in the refrigerator.
These will keep for up to 2 weeks in an airtight container.
