Quinoa Kale Salad

I woke up at 6am on Halloween to make a bunch of things in the kitchen. A cheesecake, a banana bread, and this kale salad. I make Lee a birthday cheesecake every single year. This bowl is inspired by a salad I used to grab for lunch all the time at Central Market. Since I don’t work close to Central Market anymore, I decided to take matters into my own hands and make this dish for myself. These bowls serve great as dinners or prepped as lunch for the week. Taco Salad (Spicy!) with Creamy Salsa Dressing

 

One thing Lee and I agree on: Almost all foods, really. But this salad is one of our favorites, and has become our go-to for lunch prep during the week.
