This cold, wilted spinach salad is loaded with fresh lemon juice and zest, and topped with freshly grated parmesan. The perfect simple, summer side to go with chicken or fish to complete a healthy meal.
This is Lee’s absolute favorite way to eat spinach. Our friend Townsend makes it every time they have us over for dinner, per Lee’s insistent requests, and he cannot get enough of it. Townsend was kind enough to send me his recipe and now I can make it for Lee at home.
This is such a perfect, light, healthy side dish for those hot summer days when it’s simply too hot to eat a steaming hot meal. This cold lemony spinach goes great with fish and chicken.
Cold Lemony Spinach
A cold, simple, healthy side dish that's perfect in the summer with a lighter meal such a fish.
- 8 ounces spinach fresh
- 2 tablespoons olive oil
- 1 lemon
- 1 clove garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- parmesan grated
Heat 1 tablespoon olive oil in large sauté pan over medium high heat. Add garlic and spinach, and sauté for about 5 minutes until spinach is wilted.
Drain excess water from spinach, and then remove spinach to a bowl. Place in the fridge for about 30 minutes, until chilled.*
Add remaining tablespoon of olive oil, salt, pepper, zest of half the lemon and juice of half of the lemon to the spinach. Toss everything to combine.
Top with freshly grated parsley and zest of the other half of lemon. Serve cold.
*You can place spinach in the freezer to speed this step up.
