These cucumber cream cheese sandwiches take things up a notch with an herby, dill cream cheese and radishes to add extra crunch and flavor. A good, grainy/seedy bread never hurts.
So now you can enjoy your favorite luncheon sandwich any day. This lunch is so simple to make but is so impressive.
I will definitely be packing this lunch for workdays on the reg, they are sure to brighten my 9-5!
Cucumber Sandwich with Dill Cream Cheese
A fresh, herby twist on the classic finger sandwich: this one is loaded with cucumbers, radish, cream cheese and dill.
- 4 slices bread
- 1/2 English (seedless) cucumber sliced
- 2-3 radishes sliced
- 4-6 ounces cream cheese*
- 2 tablespoons dill chopped
Combine the dill and cream cheese in a bowl. Use a fork to mash together until well combined.
Arrange sandwiches: Slather cream cheese mixture on all pieces of bread. Top with sliced cucumber and radish.
*If you want the sandwich to be heavier on cream cheese, use 6 ounces. If you want it lighter on cream cheese, use 4 ounces.
