When I was growing up I hated cooked carrots. Probably because whatever I are was a seasoning-less, mushy, tasteless blob. But as I have grown up and my tastebuds have changed, I have learned that I actually love roasted carrots when cooked correctly. So when I saw these beautiful petit carrots at Trader Joe’s the other day, I knew I needed them for a side dish this week.
When cooked, carrots take on a sweet, tender taste. And paired with a honey butter garlic sauce, these are the perfect side dish to any protein. And they are so easy to make!
Honey Butter Roasted Carrots
These carrots make the perfect side dish. They get tossed in a honey butter garlic sauce and then are roasted to tender, golden perfection.
- 1 pound carrots
- 4 tablespoons butter
- 1 and 1/2 tablespoons honey
- 1 cloves garlic minced
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- chopped parsley optional
Preheat oven to 425°F. Line a rimmed baking sheet with foil.
Melt butter in a small saucepan over medium high heat. Once melted, add in honey and garlic. Stir to combine and remove from the heat.
Toss carrots in honey butter sauce, add salt and pepper. Toss to coat evenly. Arrange carrots on baking sheet and bake for 20 minutes, until tender.
Garnish with parsley to serve.
