A floral, lavender-infused gin gimlet that makes for a crisp, simple, delicious cocktail that is so easy to make at home!
Favorite cocktail – Go!
Mine is a gimlet. And this lavender gimlet has a very subtle, floral nod to one of my favorite herbs.
Who knew making cocktails at home could be so easy? Yes, it’s fun to go out and be served but every once in a while you just want a dang good drink in the comfort of your home, in your sweatpants on your couch while you bing Handmaid’s Tale. Is that so much to ask?
No way – now your dreams can come true while you master (and realize how easy it is) making your own cocktails that taste like you went to that fancy mixology bar up the street.
I personally love gin but these would also be delicious with vodka if you prefer that. Make the simple syrup ahead of time and then you can have gimlets at home whenever your heart desries

Ingredients
- 1/2 cup water
- 1 cup sugar
- 2 and 1/2 tablespoons dried lavender buds
- 5 ounces gin
- 1 ounce fresh lime juice
Instructions
-
Make lavender simple syrup: In a small saucepan, bring sugar, water, and dried lavender buds to a boil. Stir until sugar dissolves. Remove from heat and let steep for 1 hour. Strain out the lavender.*
-
Combine 1 ounce lavender simple syrup, lime juice, and gin in a cocktail shaker or mixer with ice. Add ice and shake until mixed and very cold.**
-
Divide between two cocktail glasses and garnish with lavender if desired.
Recipe Notes
*Keep the leftover lavender simple syrup to spruce up your morning latte, put into homemade jam, or more. It will last in an airtight container in the fridge for 3 weeks.
**Shake for a minute or two, you want the ice to break down some.
