I love making my own popsicles when the weather warms up. I have somewhat of a sweet tooth, so I love having healthy, natural dessert options around when the craving hits. The best part of homemade popsicles is that you can control what goes in them – natural, simple ingredients, no artificial flavors or food dyes. And you can customize them to whatever your liking or what’s in season.
Pineapple and mint is the most refreshing combination. These are pretty tart, because hey, it’s pineapple. But I like them that way. If you want them sweeter, then add more sugar or even honey. But I like letting the taste of the fresh fruit shine in homemade popsicles.
These would also be delicious in a cocktail – some vodka, Topo Chico, lime and one of these pops dunked upside down in your glass. Just saying, who doesn’t love a poptail on a hot summer afternoon?
Pineapple Mint Popsicles
An easy, refreshing summer treat that has only 4 ingredients.
- 1/2 cup granulated sugar
- 1/2 cup water
- 5 cups chopped pineapple
- 3 tablespoons mint leaves
Make simple syrup: Bring the sugar and water to a simmer in a small saucepan and stir until sugar has dissolved.
Combine the simple syrup, pineapple, and mint in a blender. Blend until fully combined.
Pour into popsicle molds. Freeze for 8-10 hours (if using wooden popsicle sticks, freeze for one hour and then put popsicle sticks in).
