A bright, colorful salad loaded with healthy and seasonal summer vegetables. I love to serve this as a side dish to keep things light and bring a pop of color to a meal. It would be delicious alongside a protein and some toasty bread (and maybe even some cold, creamy cheese). This salad is certain to take your summer grill plans to the next level.
Tomato, Cucumber and Avocado Salad
- 2 heaping cups cherry tomatoes halved
- 1 large avocado diced
- 1 cucumber peeled and chopped
- 1/4 cup feta cheese
- 1 tablespoon parsley chopped
- 1 tablespoon mint chopped
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
Combine tomatoes, avocado, cucumber, feta cheese, parsley, and mint in a large bowl.
In a separate, smaller bowl, whisk together the olive oil and red wine vinegar. Add salt and pepper to taste.
Toss salad gently with dressing while making sure to keep everything (especially the avocado) intact.
Garnish with more parsley and mint.
