The other Saturday, Lee was hanging out with his buddies watching a golf tournament. I stayed back at our house and worked around the house. He kept bugging me to come hang out with them, so I made one more dish for the blog and then packaged it all up and headed over there. Without even stopping to wonder if a bunch of males would like the snack I had made, I walked into the house and laid a tray of these Whipped Goat Cheese Crostinis down.
Those boys gobbled these up! I asked them to choose their favorite between the Strawberry and Fig with Pistachio, and they couldn’t choose. I love when that happens. Such an effortless dish put together so quickly – and it’s a hit. I can’t wait to make these again. They are so versatile and would be great with whatever toppings you love or whatever happens to be in season – prosciutto, apples, blueberries, pecans, bacon. The list is really endless.
Whipped Goat Cheese Crostini: Two Ways
Customize these super easy appetizers with your favorite seasonal goodies.
- 1 baguette sliced
- 5 ounces goat cheese
- 1/4 cup heavy whipping cream
- 1 tablespoon butter
- 3 strawberries sliced thinly
- 4 tablespoons fig jam
- pistachios chopped
Heat 1 tablespoon butter in large pan or griddle over medium heat. Add crostini and toast for about 1 minute per side, until lightly toasted. Transfer crostini to serving platter.
Using a hand mixer, beat the goat cheese in a small bowl for about 30 seconds. Add half of the cream to the bowl, and beat again. If the mixture is still lumpy, add some more cream. Keep adding cream until the mixture is smooth and spreadable.*
Spread the whipped goat cheese on the toasted crostini. Top half with strawberries, and the other half with fig spread and pistachios. Drizzle everything with honey.
*You can also use a food processor for this step.
