Ah, White Russians. I imagine a cold winter night and snuggling up on the couch in my PJs with a cold, strong, creamy cocktail in my hand. They are really best in the winter time. With their cream, vodka, and Kahlua, they just feel so cozy to snuggle up with on the couch in your PJs on a cold winter night. But what about those summer nights?
Well meet your warmer weather pal: White Russian Popsicle with Chocolate Drizzle. These are so easy to make, just whisk iced coffee, cream, kahlua, vodka, cinnamon and maple syrup together. Pour into your popsicles molds and then drizzle with some chocolate before serving. These are sure to be a hit, and they pack a punch. So adults only!
White Russian Popsicles
- 1 cup iced coffee
- 1 cup heavy whipping cream
- 4 tablespoons Kahlua
- 4 tablespoons vodka
- 1 tablespoon maple syrup
- 1/8 teaspoon cinnamon
- 1 1/2 tablespoon coconut oil
- 4 ounces bittersweet chocolate
Whisk popsicle ingredients together in a bowl, then pour into popsicle molds. Freeze for 8-10 hours (if using wooden popsicle stick, freeze for one hour, and then put popsicle sticks in).
Run warm water over the molds to remove the popsicles with ease. Place popsicles on a baking sheet and put them back in the freezer while you get the chocolate ready.
Microwave the chocolate and coconut oil together, stirring every 30 seconds, until melted (about 2 minutes).
Remove the baking sheet with the popsicles from the freezer. Pour chocolate into a ziploc bag and seal shut. Cut a very small corner off and start drizzling over the popsicles. Drizzle the chocolate over the popsicles*, it will harden quickly. Serve immediately.
*This step can be messy, I like to do this near the sink. I place the baking sheet next to the sink, cut the corner off the ziploc while holding it over the sink. The chocolate will start pouring right when you cut it so just be ready!
