A cold, simple, healthy side dish that's perfect in the summer with a lighter meal such a fish.
Heat 1 tablespoon olive oil in large sauté pan over medium high heat. Add garlic and spinach, and sauté for about 5 minutes until spinach is wilted.
Drain excess water from spinach, and then remove spinach to a bowl. Place in the fridge for about 30 minutes, until chilled.*
Add remaining tablespoon of olive oil, salt, pepper, zest of half the lemon and juice of half of the lemon to the spinach. Toss everything to combine.
Top with freshly grated parsley and zest of the other half of lemon. Serve cold.
*You can place spinach in the freezer to speed this step up.
